6 lbs of smoked sausage (Conecuh spicy & hot or hickory sausage RECOMMENDED!)
5 large yellow onions
1 bunch celery
6 heads garlic
1 box of Zatarain's Crawfish, Shrimp and Crab Boil seasoning
6 lemons, halved
4 lbs small red potatoes
15 corn-on-the cob
Fill 80-quart pot with water and turn on heat.
Add seasoning, garlic, lemons halves, and onions quarters to warm up with the water for 40 mins.
In the meantime, clean and purge the crawfish. Place crawfish in ice bath with lots of salt for a few minutes. the ice bath will typically turn muddy and brown. Then, place crawfish in a colander under cool running water while removing debri.
At full rolling boil, add red potatoes, corn halves, 1-inch sausage pieces, and diced celery. Cook and cover 10 mins.
Add the crawfish, cook and cover for 3 minutes. Turn off heat and allow pot to sit for 10 mins.
Drain and serve immediately with good hot sauce.
Wash down with Bud Light because that's what your buddy brought.
Lemon Pepper Baked Catfish
Total Time: 30 min (cook 20 min / prep 10 min)
4 Fishland Catfish Fillets (approx 6 oz each)
1 cup Cornmeal
2 Tbs Lemon Pepper seasoning
1 Tsp Garlic powder
1 Tsp Salt
Set oven to 400F.
Combine cornmeal, lemon pepper seasoning, garlic powder, and salt in shallow dish.
Coat fillets in cornmeal mixture.
Place coated fillets into a buttered and lined cookie tray.
Bake for 20-25 minutes until fish flakes with fork, golden brown, and cooked through.
Wash down with ice cold sweet tea.
Broiled Red Snapper with Cajun Seasoning
Total Time: 15 min (cook 10 min / prep 5 min)
4 Fishland Red Snapper Fillets (approx 6 oz each)
Salt and Pepper to Taste
Cajun or Creole Seasoning to Taste
Brush broiler pan rack with oil or spray with olive oil can spray.
On skin side fillets, brush with light olive oil and sprinkle salt/pepper/seasoning.
Place fillets skin side down on rack.
Sprinkle top of fillets with salt/pepper/seasoning/drizzle of olive oil.
Place fillets under broiler, 5 to 6 inches from heat.
Broil for approx 10 minutes or until fish flakes with fork and reaching internal temp of 145F.
Wash down with a stout beer like a Guinness.
Baked Tilapia Fillets with Buttery Crumb Topping
Total Time: 25 min (cook 15 min / prep 10 min)
4 Fishland Tilapia Fillets (approx 6 oz each)
Salt & Pepper to Taste
1 cup soft and fresh bread crumbs
3 Tbs melted butter
1/2 Tsp Dry Basil
Set oven to 400F.
Butter large shallow baking dish.
Add fillets to pan and sprinkle with salt.
In a bowl, combine the melted butter basil, & bread crumbs. Sprinkle over fillets.
Place pan of fillets into oven. Bake 12 to 15 mins. Last minute, broil until crumbs lightly brown.
Fish is cooked when it flakes with fork and reaches an internal temp of 145F.
