Lemon Pepper Baked Catfish

Total Time: 30 min (cook 20 min / prep 10 min)

Ingredients:

  • 4 Catfish Fillets (approx 6 oz each)

  • 1 cup Cornmeal

  • 2 Tbs Lemon Pepper seasoning

  • 1 Tsp Garlic powder

  • 1 Tsp Salt

Cook:

  • Set oven to 400F.

  • Combine cornmeal, lemon pepper seasoning, garlic powder, and salt in shallow dish.

  • Coat fillets in cornmeal mixture.

  • Place coated fillets into a buttered and lined cookie tray.

  • Bake for 20-25 minutes until fish flakes with fork, golden brown, and cooked through.

  • Wash down with ice cold sweet tea.

 

Broiled Red Snapper with Cajun Seasoning 

Total Time: 15 min (cook 10 min / prep 5 min)

Ingredients:

  • 4 Red Snapper Fillets (approx 6 oz each)

  • Salt and Pepper to Taste

  • Cajun or Creole Seasoning to Taste

​Cook:

  • Brush broiler pan rack with oil or spray with olive oil can spray.

  • On skin side fillets, brush with light olive oil and sprinkle salt/pepper/seasoning.

  • Place fillets skin side down on rack.

  • Sprinkle top of fillets with salt/pepper/seasoning/drizzle of olive oil.

  • Place fillets under broiler, 5 to 6 inches from heat.

  • Broil for approx 10 minutes or until fish flakes with fork and reaching internal temp of 145F.

  • Wash down with a stout beer like a Guinness.

 

 

Baked Tilapia Fillets with Buttery Crumb Topping

Total Time: 25 min (cook 15 min / prep 10 min)

4 servings

 

Ingredients:

  • 4 Tilapia Fillets (approx 6 oz each)

  • Salt & Pepper to Taste

  • 1 cup soft and fresh bread crumbs

  • 3 Tbs melted butter

  • 1/2 Tsp Dry Basil

Cook:

  • Set oven to 400F.

  • Butter large shallow baking dish.

  • Add fillets to pan and sprinkle with salt.

  • In a bowl, combine the melted butter basil, & bread crumbs. Sprinkle over fillets.

  • Place pan of fillets into oven. Bake 12 to 15 mins. Last minute, broil until crumbs lightly brown.

  • Fish is cooked when it flakes with fork and reaches an internal temp of 145F.

  • Wash down with Michelob Ultra.
